Snacking on delicious and healthy food is extremely easy. It may sound overly simple, but fruit and nuts make great snacks. You can soak a few extra nuts overnight so that you can snack on them during the day. Add your favorite fresh, seasonal fruit, and you have an excellent snack.
If you want something a little different, you can make some crudités and eat with the walnut pate mentioned above, or the hummus recipe below. You can also use shop-bought hummus if you are in a hurry.
Raw Hummus
This recipe is a special hummus that does not use chickpeas.
Ingredients
- 2 zucchinis
- 1 cup tahini
- 1/2 cup of lemon juice
- 1/2 cup of olive oil
- 2-4 cloves of garlic
- A pinch of sea salt
Directions
Add all the ingredients to a blender and blend until you get the right consistency – usually around 30-60 seconds. If too dry, then add a little extra lemon juice and olive oil. If too wet, then add a bit extra zucchini.
You can also serve this recipe on whole wheat bread or crackers.
