1. Kale & Avocado Salad

Ingredients

  • 1 bunch of kale
  • 1 avocado
  • 2-3 cloves of garlic
  • 2-3 large tomatoes
  • 1-2 tablespoons of sesame seeds
  • 1 tablespoon olive oil
  • A pinch of sea salt

Directions

Shred the kale with your hands and discard any hard stalks. Then mix the kale with sea salt and olive oil and soften it with your hands. Then knead the avocado into the kale so that it is a consistent mixture. Finally, add in the garlic, tomatoes, and sesame seeds. Eat and enjoy it.

If you want to make this dish a little more substantial, you can include a bowl of cooked brown rice.

2. Raw Nori Sushi Rolls

Ingredients

  • Nori sheets
  • 1 large carrot
  • 1 small lettuce
  • 1 avocado
  • 1 cucumber

Directions

You can make this recipe in a few minutes because it is so simple. First, grate the carrot and shred the lettuce leaves. Then cut both avocado and cucumber into 1″ long slices. You then lay out a nori sheet on a sushi mat and add the grated carrot and shredded lettuce leaves along its length. Then add the slices of avocado and cucumber. You then roll the nori sheet so that you end up with one long roll of sushi. Wet the end of the nori sheet with water, as this will help it to hold together. Finally, wet a sharp knife and cut the long sushi roll into 1″ pieces. Nori sheets are perforated to make the cutting easier. Serve with soy sauce.

3. Walnut Pate

Ingredients

  • 2 cups of soak walnuts
  • 1 large carrot
  • 1 large celery stick
  • 1 small bunch of cilantro
  • A pinch of sea salt
  • A pinch of cumin
  • 1 tablespoon of soy sauce

Directions

Put all the ingredients into a food processor and use the pulse setting for approximately 30 seconds until you have a pate’s consistency. This recipe is an excellent filling for the nori sushi rolls mentioned above. It can also be served in a lettuce leaf wrap or on a slice of whole-wheat bread.

4. Cucumber, Tomato and Seaweed Salad

Ingredients

  • 2 ounces of chopped Arame seaweed soaked for 20 minutes
  • 2 cucumbers, peel and sliced
  • 2 large tomatoes, sliced
  • 1 red pepper, sliced
  • 1 small red onion, sliced
  • 1/4 cup of apple cider vinegar
  • 1 tablespoon of olive oil
  • A pinch of sea salt

Directions

Add the ingredients in a large bowl and mix them. Simple and quick.

This can be served with a bowl of brown rice or maybe a baked potato.

5. Spicy Cucumber Salad

Ingredients

  • 1-3 chilies
  • 1-2 cloves of garlic
  • 1/4 lime
  • 1 large cucumber
  • 2 large tomatoes
  • 1-2 teaspoons of soy sauce

Directions

Using a mortar and pestle, crush the chilies and garlic. Then add the lime juice and soy sauce. Cut the tomatoes into about eight pieces, and mash with the other ingredients you already added. Finally, cut up the cucumber roughly by slicing the knife down the end of the cucumber multiple times, and then cutting off that section. Mix all the ingredients. You can adjust the number of chilies, garlic cloves, lime juice, and soy sauce to suit your taste. Add a little sugar if you prefer some sweetness.

You may want to serve this with a bowl of brown rice.

6. Spicy Papaya Salad

Ingredients

  • 1-3 chilies
  • 1-2 cloves of garlic
  • 1/4 lime
  • 1 small papaya, shredded
  • 2 large tomatoes
  • 1-2 teaspoons of soy sauce

Directions

Using a mortar and pestle, crush the chilies and garlic. Then add the lime juice and soy sauce. Cut the tomatoes into about eight pieces, and mash with the other ingredients you already added. Finally, add the shredded papaya. Mix all the ingredients. You can adjust the number of chilies, garlic cloves, lime juice, and soy sauce to suit your taste. You can add a little sugar if you prefer some sweetness.

Serve this recipe with a bowl of brown rice.
