Naming blogs is hard

I just realized that I started this blog post a week ago and totally forgot to publish it! So this one is old, and I’m so sorry I haven’t posted in the last week but I was busy with my Vintage Revivals contest entry that you can see here. I’ll let everyone know when it’s open for voting and remind my awesome followers to vote for me!!! I hope everyone is having a great Easter with their families and I will be posting lots of pictures and updating my blog tomorrow. A lot has been going on in the last few days and tomorrow’s update should be a long one…I’m giving you fair warning! For now here is the post I forgot to publish from last week :/ Sorry!

Trying to find a catchy title for each and every blog post is kind of tricky. I always feel like mine are boring. Or I’ll go to type in the subject line only to realize I’ve already used that title before. Apparently I’m not very original.
So my Pioneer Woman cooking experience has been amazingly delicious so far. I had 3 really yummy dinners in a row, and I discovered a really good pancake recipe for breakfast as well. On  Friday night I made some au graten potatoes and they were SO freakin good. I made sure to make extras and I had it for lunch all weekend too. Yummy cheesy goodness! Who doesn’t love cheese? 
I made some pork chops with them and wanted corn on the cob (my kids’ favorite) but Safeway didn’t have any yet so we had to go with canned corn. Not the same, but nevertheless my children once again cleaned their entire plate. I can’t wait for warmer weather and better produce! We eat a ton of fruits and veggies in the spring and summer months. I think we could pretty much live off of tomatoes, avocado, cucumber, corn on the cob, asparagus, blueberries, pineapple, cantaloupe, and strawberries. YUM!
Again, my kids ate every bite of their dinner and so did Shayne! Another successful meal from Ree Drummond’s awesome cookbook! It’s quickly become my favorite.
On Saturday morning I decided to try what sounded like an insane pancake recipe. Sour cream pancakes. Yes. Sour cream, that’s right. To me that sounded disgusting, but Shayne said he thought it would probably be good and I decided to give it a try. Hey, I hadn’t found the perfect homemade pancake recipe just yet anyways, so no big deal if this one sucked. Well, they didn’t suck at all. In fact, they were the most delicious pancakes I have ever eaten in my entire life. And no, they didn’t taste like sour cream! They were really light and fluffy and just had the best flavor and texture. They were so good that I had to buy more sour cream last night so that I could make them again today. If you’ve never tried them you should get this recipe book and try it. (Since I stated above that this post is over a week old I’d like to add that I actually made the sour cream pancakes 4 times since I originally wrote this. They are a new favorite for my family!) Great, now I want pancakes again.
Be prepared for some major crafting posts coming up this week! The countdown to my friend’s baby shower this next weekend has started and still have some things I need to finish up in time for it.
